  • 1 pound ground beef You can substitute with ground turkey or chicken.
  • 1 cup breadcrumbs Use plain or seasoned breadcrumbs.
  • 1 egg Acts as a binder for the meatballs.
  • 1 onion, finely chopped Yellow onions are traditional, but you can experiment.
  • 2 cups beef broth Use low sodium if preferred.
  • 1 packet onion soup mix Delivers classic French onion flavor.
  • 1 cup melted cheese (Swiss or provolone) Optional for topping; choose your favorite cheese.
  • to taste Salt and pepper Season according to preference.

Preparation

  • In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, egg, salt, and pepper. Mix thoroughly.
  • Scoop out portions of the mixture and roll into meatballs, approximately 1-2 inches in diameter.

Cooking

  • Arrange the meatballs in a single layer at the bottom of the crockpot.
  • In a separate bowl, whisk together the beef broth and onion soup mix.
  • Pour the broth mixture over the meatballs, ensuring they are fully submerged.
  • Cover and cook on high for 3-4 hours or low for 6-8 hours.
  • About 30 minutes before serving, sprinkle melted cheese on top and cover again until melted.

Serving

  • Serve warm, either as is or in a sub roll, with crusty bread or a side salad.
