  • 2 pieces Onions (sliced)
  • 3 pounds Chuck Roast Choose a good-quality roast with marbling.
  • 1 pound Baby Potatoes (halved) Alternatively, use larger potatoes cut into chunks.
  • 3 large Carrots (sliced)
  • 1 can French Onion Soup (10.5 oz) Can use low-sodium version if desired.
  • 1 envelope Beefy Onion Soup Mix
  • 2 cloves Garlic (minced) Adjust seasoning according to taste.
  • 1 cup Water
  • Parsley (chopped, for garnish) For a fresh finishing touch.

Instructions
 

Preparation

  • Slice the onions and spread them across the bottom of your crockpot.
  • Layer the halved baby potatoes and sliced carrots on top of the onions.
  • In a bowl, combine the French onion soup, beefy onion soup mix, minced garlic, and water. Whisk until well blended.
  • Place the chuck roast in the center of the crockpot and pour the soup mixture over it.
  • Cover the crockpot with its lid.

Cooking

  • Cook on low for 8 hours or on high for 6 hours until the roast is tender.

Serving

  • Carefully lift the roast and vegetables from the crockpot and garnish with chopped parsley.
  • Serve with mashed potatoes or egg noodles, drizzled with the flavorful gravy.
  • Pair with crusty bread to mop up any remaining gravy.

Notes
