Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 package (8 oz) cream cheese, cubed and softened
  • 1 tbsp minced garlic
  • ½ cup heavy cream or half-and-half

For the Pasta

  • 12 oz pasta (penne, rotini, or your favorite)

For Garnish

  • Chopped parsley for garnish
  • Extra Parmesan cheese for topping

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts into your crockpot, spreading them out evenly.
  • Sprinkle with garlic powder, onion powder, salt, and black pepper.
  • Pour chicken broth over the seasoned chicken, layer with grated Parmesan cheese and cubed cream cheese, then add minced garlic.

Cooking

  • Cover the crockpot and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is tender.
  • Use two forks to shred the chicken directly in the crockpot.

Pasta Preparation

  • While chicken is cooking, boil water and cook pasta according to package directions until al dente.

Combine

  • Drain the pasta and add it to the crockpot with the shredded chicken.
  • Pour in heavy cream or half-and-half and stir until pasta is well-coated.

Serving

  • Serve hot in bowls, garnished with chopped parsley and extra Parmesan cheese.

Notes

For a thicker sauce, add more cream cheese or Parmesan cheese. Leftovers can be stored in the refrigerator for up to three days or frozen for two months.
