Crockpot Garlic Parmesan Chicken Pasta

Ingredients
  

For the Chicken

  • 2 large large chicken breasts Approximately 1.5 pounds
  • 4 cloves garlic, minced
  • 1 cup chicken broth Homemade or store-bought
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Italian seasoning For added flavor

For the Sauce and Pasta

  • 1 cup heavy cream At room temperature
  • 1 cup grated parmesan cheese At room temperature
  • 3 cups cooked pasta Preferably fettuccine or penne

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add the minced garlic on top of the chicken.
  • Pour the chicken broth over the chicken breasts.
  • Sprinkle the salt, black pepper, and Italian seasoning over the ingredients.

Cooking

  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Once the cooking time is up, shred the chicken using two forks directly in the slow cooker.
  • Stir in the heavy cream and grated parmesan cheese until well combined.
  • Add the cooked pasta and gently stir until each piece is thoroughly coated in the sauce.

Serving

  • Serve warm, garnished with extra parmesan cheese and optionally, freshly chopped parsley or basil.

Notes

For added flavor, consider adding vegetables like spinach or sun-dried tomatoes in the last hour of cooking. Store leftovers in airtight containers.
