Ingredients
  

For the Marinade

  • 1/4 cup olive oil Use high quality for better flavor.
  • 2 pieces lemons (juiced)
  • 3 cloves garlic (minced) Adjust to taste if you love garlic.
  • 1 teaspoon dried oregano Can substitute with other herbs.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Main Ingredients

  • 4 pieces chicken breasts Boneless and skinless recommended.
  • 1 cup chicken broth
  • 1/4 cup fresh parsley (chopped) For garnish before serving.

Instructions
 

Preparation

  • In a medium-sized bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
  • Place the chicken breasts in the crockpot and pour the marinade over them, ensuring each piece is evenly coated.
  • Add chicken broth around the chicken breasts.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Check for tenderness; the chicken should be easy to shred with a fork.

Serving

  • Shred the chicken if desired and stir in chopped parsley.
  • Serve over rice, with a Greek salad, in pita wraps, or with roasted vegetables.

Notes
