Crockpot Ham and Bean Soup

Ingredients
  

Main Ingredients

  • 1 pound dried beans (such as navy or great northern) Soaked overnight
  • 2 cups diced ham Can use leftover or store-bought
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth Ensure enough liquid to cover ingredients
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Rinse the dried beans under cold water, removing any debris. Soak the beans overnight in plenty of water.
  • Drain the soaked beans and place them in the crockpot. Add diced ham, carrots, celery, onion, and minced garlic.
  • Pour in the vegetable broth to cover the ingredients. Add bay leaves, thyme, and black pepper. Stir gently to combine.

Cooking

  • Cover the crockpot and cook on low for about 8 hours or on high for 4 hours.
  • Check the beans for doneness after 4 hours on high; they should be tender and creamy.
  • Once cooking is complete, remove bay leaves and taste to adjust seasoning with salt.
  • For a thicker texture, use an immersion blender to puree a portion of the soup.

Serving

  • Ladle the soup into deep bowls and serve hot, garnished with fresh parsley if desired.

Notes

For optimal cooking, always soak your beans overnight. You can also add different beans or seasonal vegetables to change the flavor profile.
