  • 2 lbs chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 medium bell pepper, sliced (choose your favorite color)
  • Green onions for garnish

Instructions
 

Preparation

  • Lightly grease your crockpot to prevent sticking.
  • In a mixing bowl, combine soy sauce, brown sugar, ketchup, minced garlic, and minced ginger. Stir until the brown sugar begins to dissolve.
  • Place the chicken breasts in the greased crockpot and pour the sauce mixture over them, ensuring each piece is evenly coated.
  • Add the pineapple chunks and sliced bell pepper on top of the chicken.

Cooking

  • Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  • Shred the chicken in the crockpot using two forks and mix with the sauce.

Serving

  • Serve the Hawaiian chicken over fluffy rice, garnish with fresh green onions.
  • Optionally, serve with steamed vegetables and slices of fresh pineapple.
