Ingredients
  

For the beef

  • 2 pounds beef chuck roast Trimmed of excess fat
  • 1 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons sesame seeds
  • 1 cup beef broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha Optional, for heat

For serving

  • 8 small tortillas
  • Fresh cilantro For garnish
  • Lime wedges For serving

Preparation

  • Begin by trimming any excess fat from the beef chuck roast and cutting it into large chunks for even cooking.
  • In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, sesame seeds, beef broth, rice vinegar, and sriracha (if using) to create the marinade.
  • Place the beef pieces in your crockpot and pour the marinade over the top, ensuring each piece is well-coated.

Cooking

  • Cover the crockpot and cook on low for 8 hours or high for 4 hours until the beef is tender and shreds easily with a fork.
  • Remove the beef from the crockpot and shred it using two forks. Return the shredded beef to the crockpot and stir to mix it with the sauce.

Assembly

  • Warm the tortillas in a dry skillet over medium heat until they become pliable, about 1-2 minutes per side.
  • Assemble your tacos by placing a generous amount of the Korean beef onto each tortilla. Top with green onions, cilantro, and any other toppings desired. Serve with lime wedges on the side.
