Instructions
 

Preparation

  • Peel and dice the potatoes into bite-sized pieces.
  • Chop the onion into small bits.

Cooking

  • Place the diced potatoes and chopped onion into your crockpot.
  • Pour in 3 cups of vegetable broth.
  • Add salt and pepper to taste.
  • Set your crockpot to cook on low for 6-8 hours, or on high for 3-4 hours.
  • Check the potatoes for tenderness and mash some of them for creaminess.
  • Stir in the heavy cream and shredded cheddar cheese, cooking for an additional 30 minutes.
  • Ladle soup into bowls and garnish with chopped chives.
