Preparation

  • Rinse the dry pinto beans under cold water, checking for any stones or damaged beans.
  • Place the rinsed beans into the crockpot.
  • Add the diced onion and minced garlic to the crockpot.
  • Pour in the vegetable broth, ensuring the beans are adequately covered.
  • Sprinkle in the cumin, chili powder, salt, and black pepper. Stir gently to combine.

Cooking

  • Cover the crockpot and set it to cook on low for about 8 hours.
  • Check the beans for doneness; they should be soft and easily mashed.

Final Steps

  • Mash the beans to your desired consistency using a potato masher or fork.
  • Adjust seasoning as needed and add lime juice if desired.
  • Garnish with fresh cilantro if serving immediately.
