Main Ingredients

  • 4 pieces boneless, skinless chicken breasts You can use frozen chicken breasts without thawing.
  • 1 cup salsa Choose your preferred salsa flavor.
  • 1 packet taco seasoning For an extra kick, use spicy taco seasoning.
  • 1 can black beans (optional) Drained and rinsed.
  • 1 cup corn (optional) Frozen or canned corn works well.
  • to taste servings Tortillas or rice for serving Use tortillas for tacos or rice for serving.

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts directly into the crockpot.
  • Pour one cup of salsa over the chicken, ensuring all chicken breasts are evenly coated.
  • Sprinkle the taco seasoning on top of the salsa-covered chicken.
  • Optional: Add a can of black beans and a cup of corn to the crockpot.

Cooking

  • Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • After cooking time, check the chicken for tenderness; it should easily shred with a fork.

Serving

  • Using two forks, shred the cooked chicken directly in the crockpot.
  • Stir the shredded chicken in the juices, then serve it in warm tortillas, over rice, or in burritos.
