  • 2 cups chunky red salsa, divided 1 cup for cooking, 1 cup added after shredding

  • Pour 1 cup of chunky red salsa over the chicken, ensuring it is covered completely.
  • Cover the slow cooker with the lid.

Cooking

  • For a quicker meal, set your slow cooker to high and cook for about 3 hours.
  • For a longer cooking option, set it to low and cook for 6 to 8 hours.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C).

Shredding and Finishing

  • Once cooked, use two forks to shred the chicken directly in the slow cooker.
  • Stir in the remaining 1 cup of salsa to combine.
  • Garnish with chopped cilantro and serve with lime wedges.
