  • 1 pound ground beef Lean ground beef is recommended
  • 4 pieces bell peppers, chopped Any color preferred
  • 1 cup rice (white or brown) Uncooked
  • 1 can diced tomatoes (15 oz)
  • 2 cups beef broth Can substitute with chicken broth
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper

Preparation

  • Brown the ground beef in a skillet over medium heat until cooked through. Drain any excess fat.
  • In the crockpot, layer the browned beef, followed by the chopped bell peppers, uncooked rice, and diced tomatoes.
  • Pour in the beef broth and sprinkle with Italian seasoning, salt, and pepper.
  • Gently stir to combine all ingredients.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the rice is tender.
  • Serve directly from the crockpot, optionally topping with cheese before serving.
