Preparation
- Begin by browning the ground beef in a skillet over medium heat, breaking it into smaller pieces as it cooks. Drain excess fat.
- Transfer the browned beef to your crockpot.
- Open and drain the black beans and corn. Add them along with the diced tomatoes to the crockpot.
- Sprinkle the taco seasoning over the mixture and stir gently to combine.
Cooking
- Set the crockpot to low heat and cook for 4 to 6 hours.
- About 30 minutes before serving, stir in half of the shredded cheese until melted.
Serving
- Scoop the casserole into bowls and layer with crushed tortilla chips.
- Sprinkle the remaining cheese on top and add a dollop of sour cream and chopped green onions. Enjoy!
