  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 package taco seasoning
  • 2 cups pasta (e.g., rotini or penne) Choose your favorite pasta shape.
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes, undrained Use diced tomatoes with green chilies for extra flavor.
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheese (e.g., cheddar or Monterey Jack) Add during the last 30 minutes of cooking.
  • 3 cups beef broth or water Essential for cooking the pasta.
  • to taste salt and pepper Adjust according to your preference.

Preparation

  • Brown the ground beef in a skillet over medium heat, then drain any excess fat.
  • Transfer the cooked ground beef into your crockpot.
  • Add the taco seasoning to the beef and mix thoroughly.

Cooking

  • Add uncooked pasta, drained black beans, and diced tomatoes with their juices into the crockpot.
  • Pour in the corn and add beef broth or water, then stir gently to combine.
  • Cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  • During the last 30 minutes, stir in the shredded cheese until melted.

Serving

  • Serve in bowls, optionally with toppings like sour cream, fresh cilantro, jalapeños, or avocado.
