  • Layer your ingredients: Start by placing your slow cooker on a stable surface. Pour in the vegetable broth as your base, adding the diced tomatoes next.
  • Add the veggies: Throw in the diced carrots, chopped celery, minced garlic, and chopped onion.
  • Season it right: Sprinkle in the Italian seasoning and stir gently to incorporate all flavors.
  • Set the cooker: Cover your slow cooker and set it to low heat. Let it cook for about six hours.
  • Add the finishing touches: After six hours, stir in the tortellini and chopped kale.
  • Final cook time: Cover the slow cooker again and let it cook for an additional 30 minutes on low.
  • Season to taste: Before serving, taste your soup and add salt and pepper as needed.
