Main Ingredients

  • 1 lb chicken breasts High-quality chicken recommended
  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 1 can diced green chiles
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth

Seasonings

  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper

Toppings

  • to taste Shredded cheese (e.g., Monterey Jack or cheddar)
  • to taste Avocado, diced
  • to taste Tortilla chips

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • Drain and rinse the white beans, then add them to the pot.
  • Add the diced green chiles, diced onion, and minced garlic.
  • Pour in the chicken broth.
  • Sprinkle in the cumin, chili powder, salt, and pepper, adjusting to taste.
  • Stir everything gently to combine.

Cooking

  • Cover and set the slow cooker to cook on low for 6-8 hours or high for 3-4 hours.

Finishing

  • Once cooking is complete, shred the chicken right in the broth using two forks.
  • Serve the chili hot with your choice of toppings.
