Ingredients
  

Salad Ingredients

  • 2 medium medium apples, cored and diced Choose crisp apples like Granny Smith or Honeycrisp.
  • 2 cups carrots, grated Grate fresh carrots for maximum crunch.
  • 1 cup celery, diced
  • ¼ cup red onion, finely chopped
  • ½ cup raisins or dried cranberries
  • ¼ cup chopped walnuts or pecans (optional) Optional for extra crunch.

Creamy Citrus Dressing

  • ½ cup plain yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey Adjust based on sweetness preference.
  • Juice of 1 orange
  • Zest of 1 lemon
  • to taste salt and pepper Adjust seasoning as preferred.

Instructions
 

Preparation

  • Core and dice the apples.
  • Grate the carrots and dice the celery.
  • Finely chop the red onion. If using nuts, chop them as well.

Mixing Salad

  • In a large mixing bowl, combine the diced apples, grated carrots, diced celery, red onion, raisins or dried cranberries, and chopped nuts if using.

Preparing Dressing

  • In a separate bowl, mix together the plain yogurt, mayonnaise, honey, orange juice, lemon zest, salt, and pepper. Adjust seasoning to your preference.

Combining

  • Pour the dressing over the salad ingredients and toss everything together until well-coated.

Chilling and Serving

  • Chill the salad in the refrigerator for about 30 minutes to allow flavors to meld.
  • Serve the salad cold or at room temperature.
