Cucumber Pasta Salad

Ingredients
  

  • 1/2 pound rotini pasta
  • 1 English cucumber (seeded and sliced into half moons) (about 3 cups)
  • 1 cup red onion (diced; about 1 cup)
  • 1 cup plain Greek yogurt
  • 1 tablespoon white vinegar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill (chopped)
  • 1/2 teaspoon garlic powder

Instructions
 

  • Boil a large pot of salted water. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  • In a small bowl, whisk together Greek yogurt, lemon juice, white vinegar, chopped dill, and garlic powder to create the dressing.
  • In a large mixing bowl, combine the cooled pasta, sliced cucumbers, and diced red onion. Pour the dressing over the salad and toss gently.
  • Serve immediately or refrigerate for up to an hour to allow flavors to meld.
