  • 1 cup pitted dates, chopped Use fresh dates for best flavor. Soak dry dates in warm water if needed.
  • 1/2 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1/2 cup brown sugar Packed brown sugar works best.
  • 1 large egg Room temperature egg recommended.
  • 1 teaspoon vanilla extract Adds flavor to the cookies.
  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat flour for more fiber.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt Enhances flavor.
  • 1/2 cup chopped nuts Optional; can use almonds, walnuts, or pecans.
  • 1/4 teaspoon cinnamon Optional for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if you’re using it.
  • Slowly add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped dates and nuts, if desired, until evenly distributed.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 10 to 12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
