Decadent Hawaiian Guava Cake

Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 1 cup guava puree

For the frosting

  • 2 cups powdered sugar
  • 0.5 cups unsalted butter, softened
  • 3 tablespoons guava puree
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together ½ cup of softened butter and 1 ½ cups of granulated sugar until light and fluffy.
  • Add in 3 large eggs, one at a time, mixing well after each addition.
  • Stir in 1 tablespoon of baking powder, 1 teaspoon of vanilla extract, and 1 cup of guava puree.
  • In another bowl, whisk together 2 cups of all-purpose flour and ½ teaspoon of salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of milk. Mix until just combined.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Frosting

  • While the cakes cool, prepare the frosting by creaming together ½ cup of softened butter and 2 cups of powdered sugar in a bowl.
  • Add 3 tablespoons of guava puree and 1 teaspoon of vanilla extract. Mix until smooth and fluffy.

Assembly

  • Once the cakes are completely cool, spread a layer of guava frosting on top of one cake layer before placing the second layer on top.
  • Use the remaining frosting to cover the top and sides of the cake.
  • Use additional guava puree, if desired, to drizzle over the top for added flavor and decoration.
