Ingredients
  

Main ingredients

  • 8 ounces spaghetti or fettuccine
  • 1 pound large shrimp, peeled and deveined Use fresh for best flavor.
  • 3 tablespoons olive oil Extra virgin recommended.
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes Optional for heat.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup vegetable broth or chicken broth
  • 1 lemon zested and juiced Adjust acidity to taste.
  • 1/4 cup fresh parsley, chopped
  • to taste salt and pepper
  • Grated Parmesan cheese, for serving Optional.

Instructions
 

Cooking Pasta

  • Cook the pasta according to package instructions in a pot of boiling salted water until al dente. Drain, reserving about 1/2 cup of the pasta water.

Preparing the Sauce

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  • If desired, sprinkle in the red pepper flakes, then add the shrimp to the skillet. Cook for 2-3 minutes on each side until they turn pink and opaque.
  • Stir in the cherry tomatoes and broth, bringing the mixture to a simmer. Cook for about 3-5 minutes until the tomatoes soften.
  • Add the cooked pasta to the skillet, tossing to combine. If the pasta is too dry, add a little reserved pasta water until you reach your desired consistency.
  • Mix in the lemon zest and juice, along with the chopped parsley. Season with salt and pepper to taste.

Serving

  • Serve the dish warm, adding grated Parmesan cheese on top if desired.

Notes

To enhance presentation, serve in a wide bowl and consider adding a lemon wedge on the side. Pair with crusty bread and a simple salad for a light balance.
