Ingredients
  

For the Egg Mixture

  • 7 large large eggs For the egg base
  • 2 tablespoons butter For sautéing
  • 2 cloves garlic Sliced thin
  • 5 oz baby spinach Used in the filling
  • 1/3 cup mayo For creaminess
  • 1 tablespoon mustard For flavor
  • 1/2 lemon juice Freshly squeezed
  • 1/2 teaspoon smoked paprika For seasoning
  • 1/4 teaspoon hot sauce To taste
  • 2 tablespoons dehydrated potato flakes For texture
  • 1 red fresno chili pepper Minced, for decoration
  • 1 yellow bell pepper cut into small stars For decoration
  • Parmesan cheese for garnish Optional, for finishing touch

Instructions
 

Cooking the Eggs

  • Place the eggs in a pot and cover them with water. Bring to a rolling boil, then reduce heat to low and let simmer for 10 to 12 minutes.
  • Transfer the eggs to an ice bath to cool before peeling.

Preparing the Filling

  • In a sauté pan, melt the butter over medium heat. Add sliced garlic and cook until fragrant.
  • Toss in the baby spinach and cook until wilted, about 2-3 minutes. Drain any excess moisture and set aside to cool.
  • Once the eggs are cool and peeled, slice them in half lengthwise and scoop out the yolks into a mixing bowl.
  • Add the cooked spinach and garlic, mayo, mustard, lemon juice, smoked paprika, hot sauce, and potato flakes to the yolks. Blend until smooth.

Assembling the Christmas Trees

  • Use a piping bag or a zip-top bag to fill the egg whites with the mixture.
  • Stack three filled egg halves upright on a plate to form a triangular shape.
  • Sprinkle more smoked paprika on top for color and garnish with pieces of the red fresno chili pepper, and a yellow bell pepper star on top.
  • Finish with a light dusting of Parmesan cheese.

Notes

For a vegan version, substitute eggs with a mixture of avocados, lemon juice, and mustard. You could also customize with herbs or extra spices to enhance flavors. Consider making the filling ahead of time and filling the egg halves just before serving.
