  • 1 cup dill pickles, chopped Opt for good-quality dill pickles for the best flavor.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream Add more for a creamier soup or blend a portion for thickness.
  • 1 tablespoon fresh dill, chopped Fresh dill enhances the flavor; adjust if using dried.
  • Salt and pepper to taste

Preparation

  • Pour 4 cups of chicken broth into a large pot and bring it to a gentle boil over medium-high heat.
  • Add the diced potatoes and let them cook for about 10 minutes or until tender.
  • In a separate pan, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant, about 5 minutes.
  • Transfer the onion and garlic mixture into the pot with the chicken broth and cooked potatoes.
  • Stir in the chopped dill pickles and simmer for another 5 minutes.
  • Remove the pot from heat and stir in the sour cream and fresh dill, seasoning with salt and pepper to taste.

Serving

  • Serve the Dill Pickle Soup hot, preferably with crusty bread.
  • Garnish with additional fresh dill and a sprinkle of freshly cracked black pepper if desired.
