Dirty Rice with Ground Beef

Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 medium onion, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper adjust to taste
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons vegetable oil
  • 1 cup green onions, sliced (for garnish)

Instructions
 

Cooking

  • In a large skillet or pot, heat the vegetable oil over medium heat.
  • Add the chopped onion, bell pepper, and celery to the pan, cooking until they soften, about 4-5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the ground beef, breaking it up with a spatula. Cook until browned, about 6-8 minutes.
  • Drain excess fat if necessary.
  • Stir in the paprika, dried thyme, cayenne pepper, salt, and black pepper.
  • Add the rice, mixing well to combine with the beef and vegetables.
  • Pour in the beef broth, and add the bay leaf. Bring to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked and has absorbed the liquid.
  • Remove the bay leaf, and fluff the rice with a fork.
  • Serve hot, garnished with sliced green onions.

Notes

For added flavor, consider using smoked paprika or a pinch of cumin. Let the dish rest off the heat for a few minutes to meld the flavors.
