Ingredients
  

Main ingredients

  • 1 cup Rice Long-grain rice like basmati or jasmine works best.
  • 1.5 lbs Chicken breasts or thighs Use your preferred choice.
  • 3 cups Chicken broth Used for cooking the rice.

Tzatziki sauce ingredients

  • 1 cup Greek yogurt Adds creaminess to the dish.
  • 1 grated Cucumber For freshness and crunch.
  • 2 cloves Garlic, minced Enhances flavor.
  • 2 tbsp Fresh dill Fresh herbs provide a burst of taste.
  • 2 tbsp Lemon juice Adds a tangy flavor.
  • Salt and pepper, to taste For seasoning.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a casserole dish with cooking spray or olive oil.
  • Spread the rice evenly across the bottom of the greased casserole dish.
  • Lay the chicken (either breasts or thighs) over the rice, evenly spaced, and sprinkle with salt and pepper.
  • In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to make the tzatziki sauce.
  • Spoon the tzatziki sauce generously over the chicken.
  • Pour chicken broth over everything in the casserole dish.
  • Cover the dish tightly with foil.

Baking

  • Bake for 45 to 50 minutes.
  • Once baking time is up, carefully remove the foil and stir the dish to mix the tzatziki and rice together.

Serving

  • Serve hot, optionally garnishing with extra dill or slices of cucumber.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days in the refrigerator. You can freeze for up to 2-3 months. Consider adding vegetables like bell peppers or spinach for added nutrients.
