  • 6 pieces boneless, skinless chicken breasts Uniform size for even cooking
  • 1 cup heavy cream Can be substituted with coconut milk for a dairy-free option
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sun-dried tomatoes, chopped Sautéing them briefly before adding can enhance flavor
  • 1 cup fresh spinach
  • 1 cup grated Parmesan cheese
  • to taste Fresh basil leaves for garnish

Instructions
 

Preparation

  • Start by placing the chicken breasts in the bottom of your crockpot in a single layer.
  • In a separate bowl, combine the heavy cream, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix well until everything is incorporated.
  • Pour the mixture over the chicken breasts, ensuring they are evenly coated.
  • Add the chopped sun-dried tomatoes and fresh spinach on top of the chicken.
  • If desired, sprinkle the grated Parmesan cheese over the entire mixture.

Cooking

  • Cover the crockpot with its lid and set it to cook on high for 4 hours or on low for 6 to 7 hours.
  • After the cooking time is complete, check that the chicken is cooked through and tender.
  • Stir gently to combine the sauce and chicken before serving.

Notes
