  • 4 pieces chicken thighs or breasts, cut into chunks
  • 1 cup orange juice, freshly squeezed Freshly squeezed for the best flavor.
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar Adjust sweetness to taste.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced Optional to omit for a ginger-free version.
  • 2 teaspoons cornstarch For thickening the sauce.
  • Salt and pepper to taste Use as needed.
  • Optional: sliced green onions and sesame seeds for garnish

Preparation

  • Mix together orange juice, soy sauce, brown sugar, minced garlic, and minced ginger in the slow cooker until well combined.
  • Add chicken chunks to the slow cooker and toss in the marinade until well-coated.
  • Cover the slow cooker and set it to low, cooking for 4 to 6 hours.
  • Check chicken for tenderness; it should easily flake apart with a fork.

Thickening and Serving

  • Combine cornstarch with a few tablespoons of water to create a slurry, and stir it into the remaining sauce in the slow cooker.
  • Return the chicken to the cooker and toss with the thickened sauce to ensure every piece is coated.
  • Serve over rice or noodles and garnish with green onions and sesame seeds if desired.

Notes
