Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup orange juice
  • 1/2 cup soy sauce Low-sodium option recommended
  • 1/3 cup honey Can be reduced for less sweetness
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch Optional, for thickening
  • Salt and pepper to taste

For Serving

  • Cooked rice For serving
  • Chopped green onions For garnish

Instructions
 

Preparation

  • Pour the orange juice, soy sauce, and honey into your slow cooker and mix well.
  • Add the minced garlic and grated ginger to the mixture and stir to combine.
  • Add the boneless, skinless chicken thighs, ensuring they are well coated with the sauce.

Cooking

  • Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours.
  • If using cornstarch, mix it with water to create a slurry. After the chicken is cooked, remove it and add the slurry to the sauce.
  • Cook on high for an additional 10-15 minutes until the sauce thickens.

Serving

  • Shred the chicken if desired, or serve the thighs whole. Ladle sauce over rice and garnish with green onions.

Notes
