- 2 pounds beef chuck roast cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 large yellow onion diced
- 3 cloves garlic minced
- 4 medium carrots sliced
- 3 medium russet potatoes peeled and cubed
- 3 tablespoons tomato paste
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
Step 1: Brown the Beef
Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.
Add the beef chunks in batches, making sure not to overcrowd the pot. Sear the beef until it’s nicely browned on all sides. This step is key for building flavor.
Once browned, remove the beef and set it aside.
Step 2: Sauté the Vegetables
In the same pot, add the remaining 1 tablespoon of olive oil.
