  • 4 cups broccoli florets
  • 2 cups shredded sharp cheddar cheese Opt for sharp cheddar for better flavor.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth Homemade broth enhances flavor.
  • 1 cup heavy cream or milk Substitute with dairy-free options if needed.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil or butter Use for sautéing.

Preparation

  • Set the Instant Pot to the sauté function and heat olive oil or butter.
  • Add diced onion and minced garlic; sauté for about 3-4 minutes until translucent.

Cooking

  • Add the broccoli florets and pour in the vegetable broth, stirring to combine.
  • Close the lid of the Instant Pot and set it to cook at high pressure for 5 minutes.
  • After the timer goes off, perform a quick release of the pressure.

Finishing Touches

  • Carefully open the lid, stir in the heavy cream or milk and shredded cheddar cheese.
  • Mix until creamy; optionally use an immersion blender for a smoother texture.
  • Season with salt and pepper to taste before serving.

Notes

For a heartier soup, add cooked chicken or turkey. For a lighter version, substitute half of the cream or milk with vegetable broth.
