Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Should be softened but not melted.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Add one at a time.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 1 1/2 cups chopped fresh or frozen cherries If using frozen, thaw and drain well.
  • 1 cup chocolate chips (optional) For a chocolatey variation.
  • 1/2 cup chopped pecans or walnuts (optional) For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients until just combined.
  • Gently fold in the chopped cherries, and if desired, the chocolate chips and nuts.

Baking

  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are lightly golden and the centers look set but slightly soft.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
