Ingredients
  

For the Cookie Dough

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For Coating

  • 1/2 cup powdered sugar for coating

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine granulated sugar and vegetable oil until smooth.
  • Add eggs one at a time, mixing well after each addition. Then, add the vanilla extract.
  • In a separate bowl, sift together all-purpose flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet ingredients with a spatula, being careful not to overmix.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.

Baking

  • Roll the chilled dough into 1-inch balls and coat each ball generously in powdered sugar.
  • Place the coated dough balls on the prepared baking sheet, leaving space between them.
  • Bake in the preheated oven for about 10-12 minutes, until the edges are set but the centers remain soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve on a platter and dust with more powdered sugar if desired. Store in an airtight container to maintain softness. To freeze dough, roll into balls before freezing, then bake directly from the freezer.
