  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar for the filling
  • 1/2 teaspoon vanilla extract for the filling

For Decoration

  • 4 ounces white chocolate melted
  • Red and green sprinkles for festive decoration

Preparation

  • Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  • Prepare the Pan: Grease your jelly roll pan and line it with parchment paper.

Baking the Cake

  • Mix the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, powdered sugar, salt, and baking powder.
  • Beat the Eggs: In a large bowl, beat the eggs and granulated sugar until thick and pale.
  • Add Vanilla: Stir in the vanilla extract into the egg mixture.
  • Combine Mixtures: Gently fold the dry ingredients into the egg mixture.
  • Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 10 to 12 minutes.
  • Cool the Cake: Dust a clean kitchen towel with powdered sugar. Turn the baked cake onto the towel and roll it up. Let it cool completely.

Making the Filling and Assembly

  • Prepare the Filling: Beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  • Fill the Cake: Carefully unroll the cooled cake and spread the cream cheese filling evenly.
  • Re-Roll the Cake: Gently re-roll the cake without the towel.
  • Decorate: Drizzle melted white chocolate over the rolled cake and sprinkle with red and green decorations.

Serving

  • Slice the cake into 1-2 inch thick pieces and serve with optional garnishes.
