Easy Cornflake Cookies

Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Make sure the butter is softened, but not melted.
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups cornflakes Use fresh cornflakes for best texture.
  • 1 cup chocolate chips Optional for chocolate lovers.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet ingredients until just combined.
  • Gently fold in the cornflakes and chocolate chips, being careful not to crush the cornflakes.
  • Drop rounded tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown.
  • Remove from oven and cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For a chewier cookie, slightly underbake. Chill the dough for about 30 minutes before baking for better shape.
