Ingredients
  

Meat

  • 1 pound ground beef or Italian sausage (or turkey/plant-based crumbles)

Sauce

  • 1 jar 24 oz pasta sauce (marinara or your favorite flavor)

Noodles

  • 9–12 uncooked lasagna noodles regular or oven-ready

Cheese Mixture

  • 2 cups ricotta cheese (or cottage cheese)
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese divided

Toppings

  • 2 cups shredded mozzarella cheese
  • 1 cup chopped spinach optional
  • 1/2 cup diced mushrooms optional
  • 1/2 cup chopped bell pepper optional

Seasoning

  • Salt and pepper to taste

For Serving

  • Fresh basil leaves
  • Extra grated Parmesan

Preparation

  • Brown the Meat: Begin by heating a large skillet over medium heat. Add the ground beef or Italian sausage, cooking until it's browned, about 6 to 8 minutes. Season with salt and pepper. If using optional vegetables, add during the last couple of minutes of cooking.
  • Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, garlic powder, and half of the grated Parmesan cheese, mixing until smooth.
  • Prepare the Crockpot: Lightly spray the inside of the crockpot with non-stick spray. Pour 1 cup of pasta sauce evenly over the bottom.

Layering

  • Place 3 to 4 uncooked lasagna noodles on top of the sauce. Add one-third of the cooked meat, one-third of the cheese mixture, and two-thirds of the shredded mozzarella. Repeat layers.
  • After the final layer, pour the remaining sauce on top and sprinkle with the rest of the mozzarella and remaining Parmesan cheese.

Cooking

  • Cover the crockpot and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours, until edges are bubbly and cheese is melted.
  • Let the lasagna rest with the lid off for about 15 to 20 minutes before serving.

Serving

  • Serve each slice garnished with fresh basil leaves and extra grated Parmesan, optionally accompanied by a salad or garlic bread.

Notes
