  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1.5 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 tablespoon olive oil for greasing the baking dish
  • to taste fresh parsley, chopped for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a bit of olive oil.
  • Place the rice evenly across the bottom of the prepared baking dish.
  • In a bowl, mix the chicken broth, garlic powder, onion powder, salt, and pepper. Pour this mixture over the rice.
  • Arrange the chicken breasts on top of the rice, ensuring they sit in the broth mixture.
  • Spread the tzatziki sauce evenly over the chicken breasts, covering them fully.
  • Scatter the cherry tomatoes and chopped spinach around the chicken in the dish.

Cooking

  • Cover the baking dish tightly with foil and bake for 45 minutes.
  • After 45 minutes, remove the foil and check the chicken's internal temperature to ensure it reaches 165°F (74°C). If the chicken needs more time, bake uncovered for an additional 10-15 minutes.
  • Once fully cooked, garnish with chopped parsley and serve warm.
