Ingredients
  

For the Cookie Base

  • 1 cup all-purpose flour Spoon it into your measuring cup and level off for accuracy.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Allow to soften at room temperature.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Frosting & Topping

  • 1 cup cream cheese, softened Let it warm up to room temperature for a smooth texture.
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice
  • Assorted fruits fresh fruits (strawberries, kiwi, blueberries, bananas, etc.) Customize based on season or preference.
  • Optional mint leaves for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract to the butter mixture, beating until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix; a few flour streaks are fine.
  • Scoop out tablespoons of dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden, and the centers appear set.
  • Remove from the oven and let the cookies cool completely on a wire rack.

Frosting and Topping

  • While the cookies cool, mix together the softened cream cheese, powdered sugar, and lemon juice in a bowl until smooth.
  • Once the cookies are cool, spread a generous layer of the cream cheese mixture on top of each cookie.
  • Arrange your favorite fruits on top of the frosted cookies in a decorative pattern.
  • Optionally, garnish with mint leaves for an extra touch.

Notes
