Preparation

  • In another bowl, whisk together the Greek yogurt, eggs, vanilla extract, and honey or maple syrup until smooth.
  • Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Avoid over-mixing to prevent denser pancakes.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or butter.
  • Pour a ladleful of batter onto the skillet, ensuring not to overcrowd the pan. Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook on the other side until golden brown, another 2-3 minutes.
  • Repeat with remaining batter, adjusting heat as needed to prevent burning.
