Main Ingredients

  • 2 cups diced leftover ham
  • 4 cups diced potatoes Yukon Gold or red potatoes recommended
  • 1 cup chicken or vegetable broth Use quality broth for best flavor
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream Can be substituted with half-and-half or coconut cream
  • 2 tablespoons butter
  • to taste salt and pepper Adjust according to preference
  • for garnish Fresh parsley

Preparation

  • Melt the butter in a large pot over medium heat to coat the base.
  • Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Add diced potatoes and broth, raise heat to a boil, then reduce to medium-low and let simmer until potatoes are tender, about 15-20 minutes.
  • Stir in the diced ham and heavy cream, cooking for another 5 minutes or until heated through.
  • Season with salt and pepper to taste.
  • Ladle into bowls and garnish with fresh parsley.

Notes

Serve with crusty bread or warm dinner rolls. Can also be paired with a light salad. Excellent for meal prep and can be stored in the fridge for up to 4 days or frozen for up to 3 months.
