  • 1 cup natural peanut butter (make sure it contains no added sugar) Use natural peanut butter without added sugars or oils for best results.
  • 1 cup sweetener of your choice (erythritol or stevia works well) Choose a low-carb sweetener compatible with your diet.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • a pinch salt

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the peanut butter, sweetener, egg, vanilla extract, baking soda, and salt. Mix until you achieve a smooth consistency.
  • Use a spoon or cookie scoop to drop heaping tablespoons of dough onto the prepared baking sheet, leaving space between each cookie as they will spread.
  • Flatten each cookie slightly with a fork, creating a crisscross pattern on top for a classic touch.

Baking

  • Bake the cookies in the preheated oven for about 10-12 minutes or until the edges turn a golden brown.
  • Once done, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
