  • ¼ cup honey or maple syrup
  • 2 tablespoons lemon juice Freshly squeezed for best flavor

  • 2 tablespoons poppy seeds
  • 1 scoop vanilla protein powder Use plant-based if desired
  • ¼ teaspoon salt

Preparation

  • Gather all ingredients, including a mixing bowl, spatula, and a baking sheet or plate for chilling.
  • In a large mixing bowl, combine rolled oats, almond butter, honey or maple syrup, lemon juice, lemon zest, poppy seeds, protein powder, and salt.
  • Mix until a thick dough-like consistency forms, using your hands if necessary.
  • Roll small portions of the mixture into bite-sized balls, about one inch in diameter.
  • Place the rolled protein balls on a baking sheet or plate.
  • Sprinkle extra poppy seeds on top if desired.
  • Chill the protein balls in the refrigerator for at least 30 minutes.
