  • 1 cup long-grain white rice Rinsed under cold water
  • 2 cups vegetable broth or water Use quality broth for better flavor
  • 1 tablespoon olive oil For sautéing
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 oz) diced tomatoes, drained
  • to taste Salt and pepper
  • Fresh cilantro for garnish Optional

Preparation

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • In a medium saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for 3 to 4 minutes until softened.

Cooking

  • Stir in the rinsed rice, ground cumin, and chili powder. Cook for about a minute to toast the spices.
  • Add vegetable broth or water and drained diced tomatoes, bringing the mixture to a boil.
  • Once boiling, lower the heat to a gentle simmer, cover, and cook for 15 to 20 minutes until the rice is tender and liquid is absorbed.
  • Fluff the rice with a fork and season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes

Allow the rice to rest covered for a few minutes after cooking to fully absorb moisture. Store in an airtight container for up to 4 days, or freeze for up to 2 months.
