Easy Mexican Taco Lasagna

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup water
  • 12 pieces corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup sour cream
  • 1 cup salsa
  • to taste Chopped fresh cilantro or green onions for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat. Stir in the chopped onion and minced garlic. Sauté until the meat is browned and the onion is translucent.
  • Add the taco seasoning and water to the skillet. Simmer for about 5 minutes until thickened, stirring occasionally.
  • In a 9x13 inch baking dish, spread a layer of salsa on the bottom. Place 4 tortillas on top of the salsa, slightly overlapping them.
  • Spread half of the meat mixture over the tortillas.
  • Sprinkle a third of the cheese over the meat layer.
  • Add a layer of black beans, corn, and diced tomatoes.
  • Add another layer of tortillas and repeat the steps, creating additional layers: meat, cheese, beans, corn, and tomatoes.
  • Finish with a layer of tortillas on top and spread sour cream over the entire top layer. Sprinkle the remaining cheese on top.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for another 15 minutes until the cheese is bubbly and golden.
  • Let it cool for 10 minutes before slicing. Serve warm and enjoy!

Notes
