Ingredients

  • 1 box red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips (optional) Can substitute with semi-sweet chocolate chips or nuts.
  • Powdered sugar for dusting (optional) For additional sweetness and presentation.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, and vanilla extract. Stir until everything is well mixed and a thick dough forms.
  • If you are using white chocolate chips, fold them into the dough until evenly distributed.

Baking

  • Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, leaving ample space between each cookie.
  • Bake in the preheated oven for about 10 to 12 minutes, or until the edges are firm but the centers are still soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, dust with powdered sugar if desired for an extra touch of sweetness.
