  • 1 medium butternut squash, peeled and diced
  • 1 pound ground turkey
  • 2 tablespoons olive oil, divided
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a medium-sized bowl, toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper.

Roasting

  • Spread the seasoned squash on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and lightly caramelized.

Cooking Turkey

  • While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Introduce the minced garlic and cook for another minute.
  • Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.
  • Sprinkle in the ground cumin, paprika, and add salt and pepper. Stir well to combine.

Combining and Serving

  • Once the butternut squash is roasted, combine it with the turkey mixture in the skillet.
  • Transfer to a serving dish and garnish with fresh parsley. Serve warm.

Notes
