  • 6 pieces boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 1/3 cup soy sauce (low-sodium recommended)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
  • to taste sesame seeds and sliced green onions for garnish

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels and season generously with black pepper.
  • In a small mixing bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, minced garlic, grated ginger (if using), and sesame oil.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Sear the chicken thighs for 3 to 4 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set it aside.
  • Lower the heat to medium and pour the sauce mixture into the skillet, allowing it to simmer while stirring occasionally.
  • Return the chicken to the skillet. Cover and cook for an additional 10 to 12 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  • If desired, stir in the cornstarch slurry and cook for another minute or two until thickened.
  • Transfer the chicken to a serving plate and spoon sauce over the top, garnishing with sesame seeds and sliced green onions.

Notes

For best results, dry the chicken before seasoning to achieve crispy skin. Consider using low-sodium soy sauce for better flavor control.
