For the Bagel Dough

  • 1 cup cottage cheese (low-fat or regular)
  • 1 cup fresh spinach (chopped) Finely chopped for even distribution
  • 1 large egg (for egg wash)
  • 1.5 cups all-purpose flour (can substitute with whole wheat or gluten-free flour)
  • 1 tsp baking powder
  • 0.5 tsp garlic powder (optional) For additional flavor
  • 0.5 tsp salt

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cottage cheese, chopped spinach, baking powder, garlic powder, and salt. Mix until well combined.
  • Gradually add all-purpose flour, stirring until a dough forms.
  • If the dough is too sticky, sprinkle in more flour until it becomes soft and manageable.
  • Divide the dough into equal portions and roll each into a ball. Create a hole in the center of each ball to form bagel shapes.
  • Flatten the bagels slightly for a classic appearance.
  • Beat the egg in a small bowl and brush it over the tops of the bagels.
  • Arrange the bagels on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
  • Let the bagels cool on a wire rack.

Notes

For added flavor, consider mixing in fresh herbs or cheese into the dough. Store leftovers in an airtight container at room temperature for a couple of days or freeze for longer storage.
