Easy Strawberry Jello Greek Yogurt Dessert

Ingredients
  

For the base

  • 1 cup strawberry Jello powder
  • 2 cups boiling water
  • 1 cup cold water

For the filling

  • 2 cups Greek yogurt (plain or vanilla)
  • 1 cup fresh strawberries, diced
  • 1/2 cup whipped cream (optional for topping) Use this for garnish if desired.
  • to taste Mint leaves For garnish, optional.

Instructions
 

Preparation

  • Begin by boiling 2 cups of water in a saucepan. Once it reaches a rolling boil, remove the saucepan from heat.
  • Stir in the Jello powder, mixing well until completely dissolved.
  • Add 1 cup of cold water to the mixture, stirring until combined.
  • Pour half of the Jello mixture into clear dessert cups, filling them about halfway.
  • Refrigerate for about 30 minutes to allow it to set slightly.

Layering

  • Meanwhile, mix the Greek yogurt with a sweetener of your choice if desired, or use it plain for a tangy flavor.
  • Once the first layer of Jello is partially set, carefully spoon the Greek yogurt mixture over the Jello layer in each cup.
  • Sprinkle diced fresh strawberries over the yogurt layer, evenly distributing them.
  • Pour the remaining Jello mixture over the yogurt and strawberry layers, covering everything.
  • Return the dessert to the refrigerator and chill for at least 3 hours, or until the entire dessert is fully set.

Serving

  • Serve with a dollop of whipped cream and a sprig of mint on top if using, and enjoy!
