Ingredients
  

Main Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions
 

Preparation

  • Peel and cube the sweet potatoes. Dice the onion and mince the garlic.

Cooking

  • In a large pot, add the cubed sweet potatoes, diced onion, minced garlic, and vegetable broth.
  • For Instant Pot: Seal the lid and set to cook on high pressure for about 15 minutes.
  • For Slow Cooker: Cover and cook on low for 6 hours or on high for 3 hours.
  • For Stovetop: Bring to a boil, then reduce heat and let it simmer for about 20 minutes until the sweet potatoes are tender.
  • Once the sweet potatoes are soft, blend the soup using an immersion blender or by transferring it in batches to a traditional blender.
  • Stir in the coconut milk and ground ginger, then season with salt and pepper to taste.

Serving

  • Ladle the soup into bowls and let everyone add their desired toppings like green onions, cilantro, or croutons.

Notes
